An important safety point is isolation. The control wires from the bread baker to the controller PC must be electrically isolated from the AC wiring. Some (higher quality) bread bakers have a small low-voltage transformer to supply the power for the internal controller boards. Some (lower-quality) bread bakers use power from the AC line directly and pose a hazard when interfacing.
