The amount of oven dwell specified during rising times is dependent on ambient temperature and desired rise temperature. For a rise temperature the same as the ambient temperature, specify 0% (off). For a very warm rise temperature (90°F) with a freezing ambient temperature an oven dwell as high as 8% may be necessary.
